
When the weather cools down, there’s nothing better than a warm, homemade meal shared with family. At Aussie Kindies, we love serving up dishes that are comforting, packed with goodness, and made just right for little taste buds. This Zucchini Slice is one of our winter favourites - easy to make, full of veggies, and a hit with even the fussiest eaters!
It’s mild in flavour, perfect for kids, and filled with ingredients that support growing bodies through the cold and flu season. Plus, it’s a great make-ahead option for lunchboxes or after-kindy snacks.
Zucchini Slice Recipe
Serves: 4–6
Prep time: 20 minutes
Cooking time: 30–40 minutes
Ingredients
Main Ingredients
- 1 medium onion, finely chopped
- 500 g zucchini, grated (no need to peel)
- ½ cup frozen peas
- ½ cup frozen corn kernels
- ¾ cup reduced-fat cheese, grated
- ¾ cup wholemeal self-raising flour
- 6 large eggs, lightly beaten
- 125 g lean ham, chopped
Optional Extras:
- Sprinkle in some dried herbs like parsley or oregano
- Add 1 grated carrot or sweet potato for extra colour and sweetness
- Try a pinch of garlic powder or mild paprika
- Mix through a spoonful of ricotta or feta
- Swap out ham for shredded roast chicken or cooked bacon if you like
Method
- Preheat your oven to 180°C.
- Mix all ingredients in a big bowl until well combined.
- Pour into a greased baking dish and smooth the top.
- Bake for 30–40 minutes until golden and cooked through.
- Cool slightly, slice, and enjoy warm - or pop into lunchboxes for the next day!
Family tip: This slice keeps well in the fridge for up to three days and tastes great cold. It’s also an easy way to get more veggies into everyday meals.
